These are a favorite at our tea parties!
For all you busy ladies out there, this is a super-easy one. You can do this!
I say there is no need to reinvent the wheel, so I start with Pamela’s biscuit and scone mix. Since there is no dairy in the mix, I chose to keep my scones dairy-free. To do this, I use So-Delicious dairy-free coconut milk and Melt, a butter substitute. We will be following the recipe on the back of the bag for most of this. Let’s get started!
Scone Ingredients
- 1 bag of Pamela’s Biscuit and Scone Mix
- 8 TBSP butter or Melt, well chilled. If you are using butter, cut it into pieces. Do not use margarine.
- 1 cup of milk of your choosing
- 1/2 cup sugar {organic preferred}
- 1/2 cup dairy-free chocolate chips
Directions
- Place rack in top third of oven
- Preheat oven to 375
- Empty contents of bag into a large bowl
- Cut the butter into the mix; add the sugar, milk and chips until incorporated

- Dump the mixture out onto a piece of parchment paper

- Place the wedges onto a parchment lined cookie sheet
- Form dough into a round and cut into wedges


- Brush tops with milk
- Bake for 20 to 25 min. or until slightly golden brown

- While they are baking, let’s mix up some glaze for the top!
Glaze Ingredients
- 1/2 cup powdered sugar {organic preferred}
- 2 TBSP milk, add more if needed
Mix sugar and milk together; add more milk by the TBSP until you get a slightly runny texture.
Place scones on a cooling rack, drizzle with glaze. Enjoy!
